From some of the earliest plantings of Shiraz in the Yarra Valley with vines dating back to 1969. Shiraz (96%) co-fermented with small parcels of Viognier, Marsanne and Mataro aged 12 to 18 months in 50% new French oak barrels produces a wine that is perfumed and feminine with the tannins and acidity as integral to the wine as the fruit. One of Victoria's true heritage wines, Yarra Yering Dry Red No.1 is primarily a blend of Cabernet Sauvignon with Merlot, Malbec and a touch of Petit Verdot. Planted on a historic Yarra Valley site by the late Dr Bailey Carrodus, this wine is full of complex aromas of plum and berry which is followed by rich fruits with an oak and cedar slant. Yarra Yering, well known for their pristine and elegant red wines, also make one of the Yarra Valley's premier Chardonnays. Made solely from the original 1969 plantings, the Yarra Yering Chardonnay is fermented traditionally in open top fermenters and crafted to age in bottle for extended periods. The wine goes through 100% malolactic fermentation which adds complexity and roundness without foregoing natural acidity and structure. Aged in 40% new French oak, this classic white wine combines intense opulence with finesse & textural flintiness.

A fine example of cool-climate Chardonnay. Elegant and structured this wine shows the finesse of the Yarra Valley at it's best. A perfect white to accompany seafood and white meats.

A typically elegant Yarra Cabernet. The nose shows cassis and blackberry aromas with subtle cedary oak and the palate has a silky mouthfeel with sweet berry flavours and a lovely lingering finish.

Made by fermenting both local and imported apple juice, Castaway Original Apple Cider is fermented with cane sugar to produce a clean and crisp Cider that is very light in colour. Young apple and champagne aromas effervesce when poured into a glass.

Yering Station Yarra Pinot Noir is a classic Pinot Noir with red/black cherry complimented with brooding earthy undertones and subtle savoury spice on the nose. The palate hints of violets and lavender. Rich black cherry spice surrounded by vanillin oak. Lovely middle palate concentration supported by fine velvet like tannins.

Yering Station's Yarra Chardonnay displays citrus and subtle cashew notes on the nose with soft minerality and freshness. The palate has great texture and roundness with linear acidity with wonderful length and precision.

Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. This vineyard is situated in the Upper Yarra Valley to the south east of the traditional valley floor. The higher altitudes result in cooler growing conditions, despite the westerly aspect. The distinctive dark-red volcanic loam soil is a distinguishing feature of the vineyard. Applejack Vineyard is located on a dramatic slope and is close planted and meticulously managed.
