The rich flavoursome Shiraz produced by Bleasdale at their Langhorne Creek vineyard is ideally suited to the sparkling style. Serve well chilled with the Christmas turkey and cranberry sauce.

Sparkling shiraz is as Australian as anything, and one of the best value is from Seppelt, with the current vintage drinking superbly. Surprisingly soft and plump with ripe and giving tannins; while it's dry, there's some sweet fruit sensation on the palate that helps with dishes that have heat spikes and spice, especially Indian. Lots of plum fruit, spice and earthy notes, too, with fine acid and the fizz hit offers a refreshing lift.

Lifted aromas of red currants and blackberry accompanied by succulent red and dark berry flavours. The finish is long and with classic merlot fine grain tannins from 18 months maturation in French Oak. Chapel Hill's Michael Fragos loves using The Parson Shiraz to showcase McLarenVale's diversity and varietal character. The Shallow soils over livestone in maritime influenced vineyards between McLaren Vale and Masline Beach and also around Bowering Hill, provide explosive blueberries and liquorice with finesse and a wonderfully framing tannin structure. Up in the foothills of the Mount Lofty ranges, a Kangarilla vineyard offers Indian spice complexities that many higher priced wines would simply love to have. The added length and savoury tannins of this component and the use of some French oak result in a beguiling final release that is extraordinary.

Shingleback Red Knot Shiraz has beautiful layers of dark fruits and soft earthy chocolate aromas on the nose. The Subtle savoury oak and chewy fruit tannins gives a nice structure to the wine. This will be a rewarding wine with careful cellaring, ensuring longevity.

Chapel Hill makes great value wines in the maritime climate of McLaren Vale. This Shiraz is a beauty. Dark berries and vanillin oak are evident in the bouquet with spice coming through on the palate.

Another impeccably good offering from Chester Osborne combining rich and voluptuous McLaren Vale Shiraz with lifted fragrant Viognier. d'Arenberg is one of the pioneers of this style, the 'Magpie' continues to go from strength to strength.
