The Cabernet Merlot has attractive and complex aromas of dark berry and plum supported by well integrated vanillin oak. Cabernet Sauvignon grapes are sourced from several select vineyard sites located in the Wilyabrup sub region and north to Wildwood Rd in an endeavour to capture ripe fruit flavours, supple tannins and the distinctive perfume of Margaret River Cabernet Sauvignon. A deep and inviting black cherry colour with floral notes of violets and fruity, doughy aromas of just baked blackberry muffins. The palate is soft, inviting, and full of free range forest fruits, vanilla, cocoa and loads of supple, fine tannin. Such a pleasure to drink now but with ample ripe tannin structure to allow for aging up to 5 years.

Always regarded as one of Margaret River's favourite wineries due to the inherant quality. Forester Estate seems to marry beautifully with their value-for-money philosophy. This Cabernet Merlot continues to win wide acclaim due to its dark purple colour and its lifted aromas of raspberries and black forest cake. Rich berry flavours are well balanced by a tight tannin structure typical of quality Margaret River Cabernets. The other great bonus is the ability of this great Cab blend to morph into a true cellar star.

This is a classic Wilyabrup Cabernet – but with a twist. Rather than crafting a cabernet with massive architecture, we wanted to table a wine that dispensed with a poignant tannic structure, yet still delivered on the beauty that is Cabernet from this region.

Made from grapes grown in Pemberton WA, which were fermented on skins with the natural wild yeast then gently basket pressed. Made without any aging in oak, this Merlot is all about the fruit. Think plums and red berries.

Margaret River Syrah is noteworthy because of its fragrance and attractiveness in its youth. Aromas of juicy black cherries and boysenberries with a grind of black pepper. The palate possesses a fine grained texture comprising of ripe tannin which adds to the structure and depth of the wine.White pepper, black cherries and an eastern mosaic of spices greet on the nose, brought to yield by a soft palate of fleshy tannin and coating red and black fruits.

HOUGHTON C.W. Ferguson Cabernet Malbec, Great Southern

TASTING:Stunning vibrant fruit aromatics blackberry, cassis, and forest fruits. There's a hint of earthiness and spice adding complexity and a savoury element. The tannins are fine and long and drive the palate. Hint of red berries and pomegranate linger on the palate. The oak is intergrated and classy. WINEMAKING:Machine harvested fruit, crushed and destemmed. A portion of the fruit fermented in open-top fermenters, and the main portion in a larger format red fermenter. Macerated on skins for 10 days before being pressed into temperature controlled tanks to finish fermentation. Aged in 15% new oak, mostle French and some Hungarian for 18 months.
