Shiraz & Cabernet Sauvignon is another match that delivers something greater than the sum of its parts. Blend the rich upfront flavour and a lingering aftertaste of Cabernet, with the silky softness consistency of Shiraz, add a splash of Merlot, and you have a Rouge of super delicious deliciousness. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.

Devil’s Lair Cabernet Sauvignon is complex and layered, characteristic Margaret River lively aromas, fine tannins and subtle oak characteristics. The Devil’s Lair Cabernet shows primary blackberry fruit aromas with a deep core of dark cassis, ironstone minerality and abundant yet supple tannins. The fruit is the work of Viticulturist Simon Robertson who has guided growing at Devil’s Lair vineyards for more than 20 years. The wine spends more than a year on 100% French oak both old and new.

Already a multi award-winner, the Amelia Park Cabernet Merlot is a seamless wine that is wonderfully medium-bodied with a fine acid backbone that simply sings from beginning to end.

Woodlands Cabernet Merlot is one of the regions best examples. The Watson brothers are the custodians of a family heritage in Margaret River that continues to this day. The Cabernet Merlot has attractive and complex aromas of dark berry and plum supported by well integrated vanillin oak. A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. This medium bodied and elegant wine is a blend of predominantly Cabernet Sauvignon enhanced with a small percentage of classic varietals. Following fermentation and extended maceration, the wine has been matured in new and old French oak barriques, producing a complex blend of Margaret River fruit characters including cassis, eucalypt, capsicum, mulberry and plum with secondary notes of chocolate and cedar. 93/100 James Halliday Wine Companion 2016.

This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. Pair it with dishes like braised beef short ribs, garlic chicken wings, and zucchini gratin with tomato confit, to fully appreciate its satisfying flavours.
