A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. This is a classic Wilyabrup Cabernet – but with a twist. Rather than crafting a cabernet with massive architecture, we wanted to table a wine that dispensed with a poignant tannic structure, yet still delivered on the beauty that is Cabernet from this region.

Forester Estate Margaret River Lifestyle Cabernet Sauvignon

Grape variety - 89% Cabernet Sauvignon, 8% Cabernet Franc, 3% Petit Verdot. Oak maturation - 100% of the wine is aged in French oak barriques (20% new) for 15 months. Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.

Already a multi award-winner, the Amelia Park Cabernet Merlot is a seamless wine that is wonderfully medium-bodied with a fine acid backbone that simply sings from beginning to end.

Cullen Cabernet Merlot

Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.

Xanadu Cabernet Sauvignon

Xanadu Cabernet Sauvignon has a generous and beautifully structured palate, layered with dense fruits of the forest, ripe tannins and a persistent fruit finish. Taking all before it at the recent Dan Murphy's National Wine Show of Australia, this Xanadu Cabernet will be snapped up quickly!
