Starting with our gin base, its distilled with juniper berry, coriander, angelica and liquorice root. Sloe berry mingles with Davidson plum, both fruits giving the gin a tart flavour base. This tartness is balanced by an explosion of berries, cherries and jaboticaba, otherwise known as the Brazilian grape tree. And it wouldnt be Ink Gin if it didnt star a vibrant floral infusion. The final ingredient is native Australian rosella flowers. The rosella flower, a hibiscus found in the tropical northern parts of Australia, is vibrant in colour and has a crisp, tart flavour. This gin has been crafted using both maseration and infusion methods to create a rose pink colour. The colour comes from grapefruit, pomegranate, blood orange, lemon and organic rose petals. We recommend a garnish that is not too overpowering such as cucumber. Conveniently, it is not necessary to squeeze lemon or lime as it is already packed with citrus. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.
