Using modern viticultural practices that minimise work to the soil of their estate vineyard, ensures superior fruit is grown for the wine. Flavours of dark cherries and chocolate are finely framed with silky tannins and fresh acidity. Fine grained American and French oak are the thread that runs through this full-bodied Shiraz, tying together the opulent mid-palate and long, lingering finish.

Shingleback Red Knot Shiraz has beautiful layers of dark fruits and soft earthy chocolate aromas on the nose. The Subtle savoury oak and chewy fruit tannins gives a nice structure to the wine. This will be a rewarding wine with careful cellaring, ensuring longevity.

While normally associated with Grenache and Shiraz blends, Mourvèdre recently has begun to stand on its own two feet as a stand-alone wine. Quite evocative in nature, Chapel Hill's Mourvèdre is a dark and brooding red with wonderful hints of spice and violet tones. Made by Rose Kentish from Ulithorne at Domaine de la Sangliere, on the south coast of Provence, near Toulon. Vineyard and Vinification are run under organic principals. Pale Salmon-pink hue, a blend of Cinsault and Grenache. Fresh grapefruit with a hint of Rose Petals and red fruits of Strawberries and a long, dry, fresh finish.
