Our interpretation of a traditional British Navy Strength gin, KI NO BI SEI is made using the same production method with 11 botanicals distilled in 6 distinct flavour categories: the final blend has been recalibrated to bring out the botanicals at maximum intensity. High proof allows the distinct taste of KI NO BIs flavour profile to prevail. Its punchy at first on the palate, still has the cleanness and harmony. All essences of flavours are enhanced in good balance.

KI NO BI (The Beauty of the Seasons) is inspired by tradition and distilled, blended and bottled in Kyoto. We collaborate with the craftsmen and artisans of Kyoto who refine their skills in the legacy of the generations before them, working continuously in the cultural heart of Japan. Japans first dedicated gin distillery was founded with the sole intention of creating the finest gin possible: made from rice spirit and, wherever possible, using locally sourced botanicals, including yuzu, gyokuro tea and sansho pepper. Better known as a Calvados producer, Guillaume Drouin continues exploring new flavour associations in his small batch gins. Seeking a perfect match with apple and juniper, Drouin has signed off on a new blend devoted to red berries. A "one plant at a time" distillation policy lets Drouin keep adjusting proportions so as to obtain the best possible result. Tasting note: [2018 edition] Clear. Unique association of 11 botanicals including the gentian root cultivated in the Massif Central, gin is distilled in small batches, in a bain-marie in the historic stills of the Gentiane SALERS. This slow distillation at low temperature preserves all the delicacy of the aromatics. The bitterness of the gentian is thus erased to extract the floral expression of its original terroir.
