The variety has good acidity and can be made in several styles. The lighter aromatic style achieved with light pressing and cool fermentations generally without skin contact or oak maturation highlights the varieties fresh fruit and acidity. The grapes for our 2022 Vermentino are frome the Central Ranges grown at altitude on the slopes of Mount Canobolas at Orange. The wine was stored on lees in tank for 3 months prior to bottling. The resulting wine is pale straw in colour with slight green tinges. It has aromas of orange blossom, ripe nashi and a flinty background. The palate is rich with ripe citrus flavour and the wine finishes with a touch of salinity and a slight pithy grapefruit bitterness. The perfect wine with grilled sardines.
