This unique cuvýe is respectfully composed of the three champenois grape varieties - Chardonnay, Pinot Noir and Pinot Meunier. Entirely vinified in oak, Sous Bois (under wood) totally masters the art of blending by renewing the ancestral spirit and savoir-faire of the original Champagnes. The nose contains defined aromatics of dry fruits and fresh citrus, coupled with finely buttered seductive notes that expresses the mature complexity linked to the vinification in oak barrels. With the oldest records dating back to 1220, it took until 1872 for Bouchard to finally acquire all of the parcels of this 3.36ha Beaune monopole. Depending on the vintage not all the fruit is totally destemmed and the wine is matured in French oak for 12 months with 30-40% new wood. Always well priced and approachable in its youth it will also reward 5-10 years cellaring.

In 1775, Bouchard purchased 3.76 hectares of Volnay Caillerets Premier Cru from the Carnot family. It was the first vineyard they purchased and the label has "Ancienne Cuvée Carnot" written on it in memory of the family that owned the land before them. Medium bodied, this always elegant, persistent and fragrant wine is the epitome of Volnay and usually looks at its best with about ten years cellaring.

The 2010 Chateau d'Issan is 60% Cabernet Sauvignon and 40% Merlot, showing 'classic Margaux' in its perfume, finesse and apparent elegance. Soils are gravel and clay, which contributes to the high-tones of perfume from the wine, and though an estate that is neccesarily clawing its way back to a higher profile, is doing so with deeds in bottle over showmanship. On its side, the vineyard is dense with older vines that naturally offer lower yields, allowing for a higher quality of fruit for the winemaking team, in turn producing a wine of stellar quality from 2010.
