The Hidden Sea Shiraz

An array of red fruits and spiced oak. Light red fruits and spiced oak. Fermentation completed in a stainless steel fermenter for 10 days. Pressed onto 1g/L of French oak (Cuvee Series No.1) chips. Matured on oak for four months. Blended with 10% of mixed white wine (pinot gris and riesling) to help soften tannins. Vivid crimson hues. Shiraz. Its Wine. Drink it. The Hidden Sea was created to captivate our friends, celebrate the amazing place we make our wines, and to look and taste god damn great. Reschke Limestone Coast Merlot

Situated in the heart of the Limestone Coast, Reschke benefits from optimal vineyard soils characterised by thin layers of rich red loams overlaying ancient limestone. This distinct combination provides the perfect foundation for grapevine growth, allowing Reschke to consistently craft high-quality wines that capture the essence of the region. This Shiraz has intense aromas of dark berries, black plums, and a touch of cracked black pepper. Ripe fruit flavours harmonise with notes of dark chocolate and subtle oak, creating a full-bodied and velvety mouthfeel,while well-integrated tannins contribute to the lingering finish that leaves traces of blackberry with a hint of spice.

BRAVE SOULS SHIRAZ

Sons of Eden Marschall Shiraz

Deep garnet in colour, displaying a mixed array of wildberry and red licorice aromas. The palate is fresh and vibrant, juicy and rounded. A very modern styled Barossa Shiraz, which is delicious drinking now that will mature well for the medium term. A variety of fermentation techniques were utilized, but all involved extended skin contact ranging from 15 to 25 days. A cold soak period of up to 6 days occurred before a natural warming to start the fermentation. Upon completion the ferments were pressed to a mix of new and seasoned oak hogsheads, for malolactic fermentation and maturation.

Little Giant Core Barossa Shiraz

The Little Giant is a modern take on Barossa Shiraz displaying elegance and freshness derived from the cool climate Eden Valley fruit components. Blackberry and dark chocolate fill the glass with the wine’s maturation in older oak adding licks of vanilla and cedar. The finish is soft and vibrant with fine silky tannins. Pair with hearty dishes and red meats.

Tucked away nicely in the Adelaide Hills, Sidewood Estate have made an art form out of crafting some of the very best single vineyard cool-climate wines available in Australia. Owen and Cassandra Inglis purchased the boutique property in 2004 and immediately set about making their vision become a reality. Their Sidewood Shiraz displays that vision to perfection. Attention to detail is the key here which enables flavours of red cherry, currants and dark plum to shine through along with hints of cinnamon and spice. The texture is beguiling and gives promise to a wine that will age for up to a decade.
