Cuco Barbadillo Oloroso
Barbadillo, established in 1821, continue to be a very important Sherry producer from within the 'Jerez Triangle' in south-western Spain. Well known for high class, quality Sherry's, this Cuco Oloroso is made in a slightly different way than what is considered the norm. An oxidative process is used to develop the nutty, complex characters into the wine instead of the usual Flor yeast system. This produces an intensely flavoured Oloroso with a rich and smooth texture and dominant walnut notes. The finish covers the palate with a dense, velvet like feel.
Principe Barbadillo Amontillado
Barbadillo and their quality Sherry's have been an integral part of the Jerez region since 1821. Located in the south-western area of Spain and apart of the all important 'Jerez Triangle', Barbadillo provide not only some of the very best Sherry here in Australia, but some of the best value for money. This Principe Amontillado is a quirky style that is in fact a fortified aged Manzanilla. Plenty of spice, hazelnut and almond meal characters. The finish is wonderfully long and exceptionally rich for an Amontillado.

Tasting Notes APPEARANCE The maturation in steel tanks gives garnet colour with elegant amber shades. AROMA Elegant, refined with intense bitter orange, hints of vanilla, gentian, floral and spicy notes such as cinnamon, ginger, cloves and with a clear perception of artemisia. PALATE Intense and harmonious. Red fruits, long and spicy persistence and pleasantly sweet final.
Fernando de Castilla Classic Fino Sherry
Made from Palomino Fino grapes grown on chalky 'albariza' soils characteristic of Jerez, the grapes are pressed and fermented in stainless steel before fortification. The wine is biologically-aged under flor yeast in American oak barrels within a traditional solera system. The wine is around 5 years old on average, as soleras do not produce wines of a singular age due to continuous fractional blending over many years. Straw coloured, with notes of stone fruit on the nose, followed by saline driven citrus and nuttiness on the palate. Enjoy in classic and modern cocktails such as the Bamboo, Trident, Remember the Alimony, Rebujito, or Lifetime Ban. Try swapping half the amount of vermouth for sherry in classic recipes for an added layer of complexity.
