Josef Chromy Chardonnay is a classic cool climate style, showing notes of melon and granny smith apple, some mid palate creamy richness and taut linear acidity. Fruit is sourced from Josef Chromys estate vineyards in Relbia in Northern Tasmania. The Chardonnay is gently pressed to stainless steel for a cool ferment with full solids retained for fermentation to give richness and texture.

The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. Bin 23 Pinot Noir is shaped by Tasmania’s cool-climate conditions, offering lifted aromatics and fine structure. Wild raspberry, caperberry and floral spice give way to savoury notes of bresaola and juniper, wrapped in graphite tannins.
