Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.

The 2008 marks the 25th anniversary of Dalwhinnie Chardonnay in the Pyrenees in western Victoria, and the wine is still not missing a beat. Complex and layered with wonderful fruit purity, Yabby Lake Single Vineyard Chardonnay is a finely structured, tightly honed style. The fruit is a hand-picked field blend of different clones. Each parcel is vinified separately and is pressed into tight grain large French oak puncheons for wild yeast fermentation. Eleven months maturation on lees imparts attractive nutty complexity.
