Sticks Cabernet Sauvignon

Harvested from the estates E block as well as from Upper Ngumby Vineyard, the fruit was immediately destemmed and crushed into static fermenters, prior to inoculation. Acholic fermentation followed, after which the juice was kept on skins for about 3 weeks and matured for 13 months in oak barrels. This Cabernet Sauvignon shows an alcohol level of 13%, exhibiting a bright crimson red colour with purple hues along the edges. Attractive aromas of blackcurrants, leaves, violets and earthy notes flow from the nose, with the supple and rounded palate featuring fresh flavours of dark chocolate, bramble and blackberry. This elegant wine is fit for consumption upon release, also having a cellaring potential of 3 to 5 years so that its flavours and structure can enhance further. Foods like Asian BBQ lamb ribs, Beef Tenderloins, meatballs and grilled steaks taste marvellous with this delicious wine.

Mitchell Sevenhill Cabernet Sauvignon

1847 Barrel 88 Cabernet Sauvignon

Just like the Barrel 88 Shiraz the Barrel 88 Cabernet Sauvignon is a reflection of the two brilliant viticultural regaions, the Barossa and McLaren Vale. These two regions are both similar and different at the same time, with the Barossa providing the richness and sweetness, while McLaren Vale provides the spice and elegance. There is a medium to full bodied palate with blackcurrant, plum and spice on the nose and palate. There is quite pronounced tannin, which is typical for premium Cabernet Sauvignon grapes due to small berries and low crops. hence this wine will age age well.  There is oak nuances of spice and pencil shavings due to it being matured in French oak and the length is good and long.

Balanced and intricate, this medium-bodied wine abounds with soft fruit density. The luscious palate is full of flavours of red currant, cassis, black cherry and plum, supported by notes of bay leaf, graphite, wet clay and chocolate. Tannins are tangy and can be found at the mid-palate, complemented by an emphasis on coal dust and ash. The wine finishes with notes of chocolate and coffee grounds.
