Christian Drouin Le Gin Carmina

After the launch of Le Gin de Christian Douin in 2015, the only gin made from more than 30 varieties of cider apples and 7 herbs selected for their perfect combination of apple and juniper aromas, Guillaume Drouin has created a new blend dedicated to red fruits. Carmina is made with the same principles as the original version of Le Gin; each botanical or fruit is macerated and redistilled separately in order to optimise the extraction of aromas. The distillates are then blended before bottling. This time the bouquet is summery. It combines flowers and fruit with the use of raspberry, blackcurrant, elderflower, vanilla, lemon and orange in addition to juniper and cider apple varieties from Normandy.

Francois Voyer Cognac VS

A young, fruit driven, grape-to-bottle Cognac. 100% Grande Champagne. Francois Voyer is a grower producer: he owns his vineyard and makes his Cognac entirely on his property. Francois Voyer vineyard is located in Grande Champagne, the 1er Cru de Cognac. Present on the finest tables of France, hailed by the specialized press as "among the best of the Grande Champagne", this producer reflects the history of a family, and the beauty of their vineyard. Distilled with the lees, the FV VS ages in new Limousin oak casks with a medium interior toast for 1 year. The ageing process continues in old barrels in a damp cellar. A progressive reduction is made, with distilled water (max 5% of diminution every 3 months). A very fine blend, minimum 30 months old. EYE: golden. NOSE: strong bouquet of vanilla, lime and white flowers. Floral tones are typical of the Grand Champagne cru young Cognacs. PALATE: a gentle start which stays on the pallet for a long time. Fruity, pleasant and persistent. Great for cocktails or can be drunk straight from the freezer. Our cocktail suggestion is a long drink called Brandy Tea. Take some ice, half a slice of orange, half a slice of lemon, 2 teaspoons of honey and 40ml of Voyer VS Cognac. Shake well and then add hot water to make a long drink. Covert liqueur was born from a desire to bring the fragrant warmth and complexity of three ingredients together in a chord of liquid harmony. Using just fig leaves, spring honey and cognac we capture a flavour in essence which is at once evocative, suave and richly perfumed. Fig trees grow abundantly in the Cognac region of France – adorning the edges of vineyards, sporadically appearing in the wild and taking pride of place in private gardens. At the start of springtime, fig trees plump their leaves with an aromatic sap; becoming richly green in colour, whilst wafting the deliciously heavy and sweet aromas of the sun-roasted leaf. To translate this aroma into flavour, we harvest the fig leaves during the brief period where they are at their most aromatic. They’re then air dried, lightly roasted by hand and finally transformed into this bright liqueur after adding just the two other aromatic ingredients, and a small amount of cane sugar to balance the sweetness. To the nose – Covert has a deep musky aroma, balanced with the brightness of fruit. On the palate it has notes of jammed figs, countered with dry tones of grilled almonds and rye. The aroma of honey lingers, contrasted with a teasing bitterness on the tongue. It is perfect served as a digestif – neat or on ice.

Today Dom Bénédictine is one of the worlds favourite liqueurs. Its secret recipe contains aged Cognac blended with 27 individual herbs, roots and spices with a mellow touch of honey. Best served neat, on ice, or in cocktails.
