The Aisling Distillery Dry Gin Murrumbidgee

Hand-crafted using a combination of locally sourced Riverina citrus, and traditional botanicals, our Dry Gin Murrumbidgee is inspired by the Riverina, New South Wales, the food bowl of Australia. This is the first Gin to be released in Griffith, New South Wales it is wonderfully balanced and juniper-forward, with heavy notes of citrus. A slight hint of the dryness to the palate initially, followed by refreshing citrus presence of New South Wales kelp among our list of botanicals.

Coastal Daisy a native foraged from our beautiful Surf Coast home and Australian hops flowers from the Victorian high country with the addition of wedged grapefruit and lemon are vapour infused for a delicate distillate balancing savoury and floral notes with a citrus freshness. Depth is added in the pot by a strong backbone of forest pine Juniper berries, the brightness of crushed coriander seeds, spiced background notes of Australian pepperberries while cinnamon give the distillate a long soft finish. Orris and Angelica root hold it all together in an interesting everyday gin. Pairs great with a local premium dry tonic, as a base for many cocktails, amazing in a classic Martini.

It allows us to produce a smooth, crisp gin with an aromatic botanical nose. Light in texture and more delicate on the palette than our pot distilled gins, this versatile little number is perfect paired with tonic, soda, mixers or cocktails.

Boatrocker Jungle Gin

Inspired by the flavours of South East Asia, fresh makrut (keffir) lime leaves, ginger, lemongrass and kumquats alongside more traditional ingredients such as juniper,coriander, angelica and orris are used in the distilling process. Jungle Gin's bright aromatics work wonderfully with a dry tonic garnished with a lime leaf, yet equally well in any citrus forward cocktail.

Boatrocker Raspberry Gin

To create this Raspberry gin, whole Raspberries were added to the finished Gin to macerate for 7 days providing a vibrant pink hue and luscious Raspberry character. Alongside more traditional botanicals, strawberry gum and earl grey tea were distilled to complement the raspberries. Boatrocker Raspberry Gin provides a modern twist to a classic G&T (feel free to garnish with fresh or freeze dried raspberries), alternatively, make a 'Pinky' Tom Collins by using Boatrocker Miss Pinky Raspberry Berliner Weisse instead of Soda water!

The Aisling Distillery Triple Juniper Gin with Elderflower

An Australian Gin produced in the Riverina, where the skies run as far as the eye can see and where we are known as THE FOOD BOWL OF AUSTRALIA. Best served over ice and paired with a fresh or dee-hydrated slice of lime, orange, lemon, cucumber, rosemary, or mint to add a refreshing and unique twist. Tonic & Soda Water aid the Gin to open up to a whole new level.Our signature Gin has two parts to the distillation, firstly the Juniper is steeped for 24 hours. This steeping process along with fresh juniper is then added to the still before pot distillation.Five other botanicals include coriander seed, orris root, angelica root, cassia bark (cinnamon), elderflower, with an addition of fresh local Murrumbidgee honey.Best shared with the ones we love, where memories are made.
