Newcastle Distilling Co Eagle One Novocastrian Rum
Newcastles first, barrel aged rum. Made from fermented treacle, this rich but smooth rum has delicate aromas and a pleasant taste. Even at cask strength of 62% ABV it is smooth and enjoyable. Aged for a period of 3 years in an American Oak ex bourbon/port barrel. Its namesake comes from the boat that our owner got to name as a kid, which belonged to his idol and mentor, his Grandfather.

Morris Rutherglen Sherry Barrel Finished Single Malt Australian Whisky
The team behind Morris Distillery has over six generations of craftsmanship in winemaking, blending and aging passed down through bloodline. This has allowed them to really master the production of the truly remarkable flavour in their Australian Single Malt Whisky. Maturated in a combination of French and American oak ex-Australian red wine casks and finished in barrels that have held our Morris of Rutherglen 10yr-Aged Amber Apera (Sherry). The Aged Amber is a full flor fino, produced predominantly from the Palomino grape. It exhibits a drier style, showing elegance and complexity from years of long-term aging in cask, making it a beautiful compliment to the whisky. The result is a well integrated and very approachable Australian single malt which the broad whisky consumer can embrace. A nose of Spun toffee, baked fruit flan with peach compote and fresh sherry cask notes. A well-structured whisky with subtle spice, toasted nut and clean oak characters, candied lemon with gentle sage and marjoram herbal notes.

It all began in 2015 when two mates from Adelaide hatched a crazy plan to start a gin distillery. One had a history in the food & beverage industry, the other – a graphic designer – passionate about creating brands. From humble beginnings in an inner-suburbs back yard garage to becoming an Adelaide institution, the Prohibition brand soon became a success. Prohibition Christmas Gin is fast becoming a hallmark of Australian Yuletide traditions, and their 2022 vintage is no exception. As always, it is perfect served over ice, in a Christmas French 75, shaken with foam and citrus, or drizzled on Christmas pudding, custard, or ice cream for a festive epicurean dessert. The 2023 Christmas Gin is a delightfully bright & decadent expression of our most festive spirit. Lashings of figs from the Adelaide Hills are elevated with cherries & late harvest Chardonnay grapes.
Wild Duck Creek Wild Duck Creek Shiraz Reserve –
Indulge in the opulence of Wild Duck Creek Shiraz Reserve 2019, a 750mL icon from Heathcote, Victoria. Crafted from the estate’s Springflat vineyard with select bunch picks, this Shiraz is made with meticulous care—hard cane pruning, shoot thinning, and up to 50% whole bunches in the ferment to enhance texture. Matured for 23 months in 100% new French oak barriques, it boasts a deep, glass-staining red-purple hue. The bouquet is savoury and oaky, with coconut, toasty barrel, mocha, and espresso notes, layered over dense black fruit. The palate is massive yet balanced, with ripe, supple tannins, concentrated oak-infused flavors, and a brandied prune aftertaste, finishing with a powerful, long linger. A bold expression of Heathcote’s terroir, this Shiraz pairs beautifully with beef or venison and offers 20 plus years of cellaring potential. A collector’s treasure from a small family winery.
