To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Bosque Verde is Spanish for green forest and this is the name of the farm where the bulk of the barley is sourced.This whisky is matured in ex-Port American oak barrels for no less than two years and is bottled at 46% abv. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky that’s full of life from start to finish and carries the uncompromised signature of Lark Whisky - a Tasmanian icon. Aroma of fresh mango, toasted pineapple, orange, vanilla and tangerines. Luscious and fruity. The palate shows peaches, apricot, even more mango, and sweet Tasmanian apples dipped in toffee. The finish is rich in fresh fruit and citrus. This whisky has length, poise and balance.

Aged in ex-bourbon casks before being finished in sherry casks. Double Wood is an excellent example of what the Balvenie distillery can craft, even at 12 years.

Since 1896 all Mortlach whiskies have been 2.81 distilled. Unlike with any other whisky, our spirit criss-crosses between six copper stills of completely different silhouettes 0.81 more times than is Scotch tradition. It is an exact science graced with a touch of magic from The Wee Witchie.The Wee Witchie is the smallest of our six stills. Since it was first forged more than 120 years ago we have fastidiously ensured every dent and detail remains unchanged because it is within this copper chamber that the specific richness of taste which has earned Mortlach the reputation as The Beast of Dufftown is created. We dedicate this 12 year old Single Malt Scotch Whisky to the still that bears the beast. It has been double cask matured in both European and American oak to enhance the distinctively rich and robust character that makes Mortlach whiskies legendary.

Johnnie Walker Aged 18 Years has rich sweet fruit aromas along with toffee caramel, vanilla and a hint of smoke. Its warming and sweet on the palate with dark fruits, malty cereal, smooth creamy vanilla, fragrant almonds and tangerines, and a gentle smoke developing. A lingering finish brings notes of dark chocolate, caramelised citrus peel and very light smoke.

The anticipated second release of Bruichladdich Port Charlotte 10 year old. The smouldering heat of peat and dark fruit is finessed by floral top notes, a twist of citrus and mellow oak. Full term in first-fill bourbon, sherry, tempranillo and French wine casks for a decade or more. Bottled at 50% alc. vol. using Islay Spring water. Heavily peated Islay Single malt - 40ppm. 18,000 individually numbered bottles only.

Matured for many years in traditional Whisky casks before being finished in sherry casks, this 12 year old single malt from Balvenie is rich and smooth. It's characterised by rich honey sweetness and a delicate layer of Sherry that lingers on the palate.

After maturing for years in South Australian red wine casks, our Muscat Finish Whisky spends additional time in richly flavoured South Australian fortified wine casks. These European oak casks held muscat for at least 20 years, and impart bold flavours of dried fruit and fine tannin.
