This guys bringing Juniper, and lots of it! Weve done this by using Macedonian berries distilled on our very own Copper Pot Still, named Ron. Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting. I can not wait for you to experience the pull between the sunflower seed and quinine, the cinnamon hit, citrus and perfectly balance juniper backbone we've so painstakingly balanced. Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.
