Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Australia first smoked gin Bushfire is a smokey, unique gin based on an original London dry gin recipe but with the original ingredients substituted for our own Australian native botanicals. The individual botanicals have been smoked with Iron Bark to uncover a rich, smokey palate with sweet hints of maple.

Created using our base spirit which is grown, harvested & distilled at our East Coast Distillery, located in the pristine Island state of Tasmania, this artisan style Hopped Gin is a combination of the 9 botanicals which include locally sourced Tasmanian pepperberries, lemon myrtle, and the renowned Tasmanian hop. We pass alcohol vapour through a mixture of juniper and hop, creating a perfect fusion of flavours. Our classic Small Batch flavour with a delicate but rich hoppy nose and a long smooth finish.

A subtle and yet complex gin, created using a grape spirit base grown, harvested and distilled at our own East Coast Brewery Vineyard, located in the pristine state of Tasmania, this Artisan style Gin is made using a combination of 9 botanicals including locally sourced Tasmanian Pepperberries and Lemon Myrtle. Made for the Gin lover in us all its full flavoured yet subtle finish is enough to compliment any cocktail.

The full flavoured, strong finish is enough to compliment any cocktail but, we think, much like the sailors of old that it is best enjoyed by itself, a sipping gin if you will.

Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

Aromatics “The spirit opens on a captivating combination of Citrus notes, led by Aniseed and Cinnamon Myrtle in harmony with a lively drift of Finger and Blood Limes that awakens and stimulates the olfactory system which rejoices in the purity of their aromas. But be patient, that is just the start of an aromatic odyssey. Juniper berries pop like champagne bubbles lifting the senses to a place they have never been. With a little time and aeration Juniper and Coriander enter the scene bringing the depth and distinction that one expects from a high quality Gin. As the spirit evolves further, the taste receptors are going crazy with anticipation, but they will have to wait as White Aspen and Riberry join the party. Add a little Lily Pilly and Dorrigo Pepper leaf and now your getting there. However after some 15 minutes of sipping a brilliant beguiling flavour of native Raspberries dusted with Macadamias emerged bringing a fabulous contrast to the above. Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.
