Umamu create exquisite handcrafted wines. Our philosophy has always been to give our wines time to age in the bottle before release, a rarity in today’s market. As in previous years, the Orenji is equal parts Semillon and Sauvignon Blanc sourced from Yungarra vineyard and a site in Rosa Glen. Both vineyards are organically managed. The fruit is hand-harvested in the cool of the morning, and ferments on skins in open fermenters for two weeks. After another eight weeks in a cement egg, the wine is pressed to barrel and egg. It undergoes full malolactic conversion before being bottled with minimal sulphur. No fining, no filtration.

Barrel fermentation and maturation in French oak barriques with partial malolactic has imparted texture and complexity to the minerally grapefruit flavours of this Chardonnay from WA's south-west corner.

Howard Park Sauvignon Blanc contains a fragrant nose of snow peas and guava with a little passionfruit which is a precursor to a palate that's juicy and tight with citrus acidity. A barrel fermented component ensures that there is a level of complexity that separates it from its contemporaries.

Fraser Gallop Semillon Sauvignon Blanc is partially barrel fermented combining the strengths of Semillon & Sauvignon Blanc to deliver an aromatic wine of strong citrus & grassy characters, tropical fruits, complexity and wonderful balance. It comes from the talented hands of Clive Otto.

The team at Hay Shed Hill has selected the best vineyard blocks on their Margaret River estate to create the Block Series. The fruit for this wine comes from some of the oldest Semillon and Sauvignon Blanc vines in the region. Full straw with yellow green hue, it presents a plush honeydew melon and warm honey mix with guava and lime juice generosity. The developing palate has a mouth-filling and harmonious mix of lime and melon with deeper traces of tropical fruits and touches of biscuit and honey chiming in on the finish. A complex barrel fermented style and ready to drink.

Notes of gunflint and citrus, further complexed with ripe stone fruits and understated oak result in a wineof great complexity and mineral drive.
