This Cabernet Sauvignon is textured with layers of dark berry flavours, dark chocolate and spice notes. It has a creamy texture with firm, yet fine grained tannin profile. Deep and bright colours with a purple hue, the Optimist Shiraz also offers aromas of lifted satsuma plum, raspberry, violet flower, with a hint of cherry oak. The palate is bursting with bright fresh blue fruits, a rich middle palate with lots of satsuma plum and dark cherries. Senior winemaker Jamie Saint, pursues his passion for the wines of the Barossa through the Barossa Valley Wine Company. He crafts wines of sophistication, each with the perfect balance of elegance, power and grace. Gravel Track pays tribute to the long gravel and limestone track that winds its way through our historic 60-year-old Farms vineyard. Lifted aromas of red cherry and raspberry complemented by clove and lavender on the nose, with a rich, earthy and vibrant palate. Soft velvety tannins provide a silky yet persistent finish, punctuated with bright redcurrant and blueberry characters and a subtle background of spice from twelve months French oak maturation.

The wine reveals deep garnet and ruby hues on the eye. A nose of coffee grounds, cocoa powder, sage bush and brambled blueberry gives way to violets, smoked white spice, roasted coconut and cedar wood. On the palate the wine has fruit sweetness wrapped around lengthy, chalky tannins and touches of moreish olive tapenade to finish.

Made from single vineyard to bottle. Low yields cool climate grapes from Nangkita. Deep sandy soil and limestone beneath, rich in elements for natural aromas and flavours. The wine is dark plum with lifted complex oak aroma. The palate has full flavour with rich berry fruit, warm, rich and intense. Upfront and splendidly appealing, the wine shows blackberry, sweet cherry, rich floral and vanillin oak notes, followed by a beautifully weighted palate that's plump and juicy, finishing lingering and silky. Deep garnet in colour, displaying a mixed array of wildberry and red licorice aromas. The palate is fresh and vibrant, juicy and rounded. A very modern styled Barossa Shiraz, which is delicious drinking now that will mature well for the medium term. A variety of fermentation techniques were utilized, but all involved extended skin contact ranging from 15 to 25 days. A cold soak period of up to 6 days occurred before a natural warming to start the fermentation. Upon completion the ferments were pressed to a mix of new and seasoned oak hogsheads, for malolactic fermentation and maturation.
