Four Pillars Olive Leaf Gin
After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).

The wild bush lemons on Lord Howe Island descend from the fruits of the early settlers. They were planted to help sustain them during the long periods between passing ships. They have a unique enveloping aroma, but beware the thorns! In the days of ships and flying boats, a tradition on Lord Howe Island was to throw flower leis into the water from departing launch boats. They inevitably washed ashore to signify their wearers return to the island.
