Complex and layered with wonderful fruit purity, Yabby Lake Single Vineyard Chardonnay is a finely structured, tightly honed style. The fruit is a hand-picked field blend of different clones. Each parcel is vinified separately and is pressed into tight grain large French oak puncheons for wild yeast fermentation. Eleven months maturation on lees imparts attractive nutty complexity.

Planted in 1979 at an elevation 300 metres, the cool-grown Chardonnay here ranks with the regions very best. An elegant and restrained cool-climate style Shaw & Smith M3 Chardonnay has been at the forefront of the modern Australian Chardonnay renaissance. Displaying notes of nectarine and citrus underpinned by crisp acidity, it evolves over time to reveal layers of toasty, mealy complexity.

The wines of Fraser Gallop Estate are intensely flavoured, textured and complex. Only the finest quality French oak barrels are used for all Fraser Gallop Estate wines, with very specific Bordelais coopers used for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian coopers for the Chardonnay. The complete winemaking process takes place at the estate - picking to vinification to barrel maturation to bottling to cellaring. Fraser Gallop Estate is an estate grown, produced and bottled wine. Flavours of lemon curd and grapefruit with searing length. A wine with clarity and finesse. A tightly focussed and very precise wine showing seamless fruit purity with the lightly toasted French oak very much in the background. This aromatic white blend is a fusion of 92% Sauvignon Blanc grapes with 8% Semillon grapes. These fruit parcels were harvested in the cool of the night and then cold pressed. The juice obtained was fermented in stainless steel before bottling. The resulting blend displays a pale green colour. The lifted bouquet exudes fresh aromas of guava, with hints of Semillon grapes evident in the background. The medium-bodied palate initially presents flint dry and racy fruit flavours, balanced by crisp acidity. The finale is excellent and lingering. Made for consumption upon release, this enticing white wine has the potential to be cellared for 2 to 3 years from vintage. Swings & Roundabouts Sauvignon Blanc Semillon goes well with poached salmon, Rottnest King George whiting or goat cheese.

Hand Picked Gin Gin clone, the balance of fruit, oak, acidity is so immaculate it is a pointless exercise to try to deconstruct their contributions. However the white peach and pink grapefruit flavours are as clear as a bell on the back palate and aftertaste, the finish fresh and clean. Masterful winemaking

All Cullen Wines are grown on a certified Biodynamic, Carbon Neutral and naturally powered estate. Grapes are harvested by hand on fruit and flower days according to the astrological calendar. The wines have no additions of yeast, acid or malolactic culture, and are in this sense natural wines which express the place and land on which they are grown, the vintage and the people.
