The Parker Coonawarra Estate Cabernet Sauvignon is made in a riper, more generous style to its peers, yet with enough restraint to display the distinct varietal and regional characteristics. Dark chocolates, violets and notes of liquorice capture the nose, revealing a expansive soft palate layered in berry fruits. The cool climate region, with maritime influences, is ideal for Cabernet, allowing the fruit to ripen slowly over an extended period to achieve the desired physiological ripeness.A cool growing season and above average winter rains leading into the 2017 vintage saw the region return to what could be best described as a more traditional Coonawarra vintage.
