Wynns Black Label Cabernet Sauvignon is the beacon of quality that all Australian Cabernet Sauvignon is compared to. Coming off the iconic red soils of Coonawarra, Wynns Black Label Cabernet Sauvignon is classic elegance. Chief winemaker, Sue Hodder, is able to craft a wine brimming with aromas of blackcurrant and plum that combine with spicy minty notes. The palate is well structured, long and fine. With the right cellaring condition, this could easily be a cellar gem.

Wynns John Riddoch Cabernet Sauvignon is the icon Coonawarra Cabernet Sauvignon. Named after Coonawarra pioneer, pastoralist and parliamentarian, John Riddoch, this Cabernet Sauvignon is sourced from the very best of Wynns vast planting in Coonawarra and it only made in the years that best express Wynns strive for excellence. Arguably richer and more complex from comparable styles in the region, John Riddoch Cabernet is highly sought after and extremely limited.

Woodlands, established in 1973, has emerged as one of the regions important producers of Cabernet Sauvignon. The original, dry-grown 3.2 hectares, planted between 1973 and 1976, has now expanded to 10.5 hectares. The sandy and gravelly red/brown loams over lateritic sub-soils are well suited to Cabernet Sauvignon. Organic and biodynamic principles are gradually being introduced. Batch-vinification in open and closed, stainless-steel fermenters with minute parcels of Malbec optimises fruit complexity. Typically the wine shows cassis/ black fruit/ cedar aromas, fine-grained tannins and underlying savoury oak.

Penfolds Bin 389 is the classic South Australian red! Often referred to as 'Baby Grange' or 'Poor Man's Grange', Bin 389 was the wine that helped to build Penfolds' solid reputation with wine drinkers around the world. A magnificent blend of Cabernet Sauvignon and Shiraz from the very best regions and vineyards available to Peter Gago and his team, the robust nature of the Cabernet grape give structure and body to the wine while the opulent Shiraz fruit provides suppleness and intensity. A true icon of Australian wine first created by the legend himself, Max Schubert, Peter Gago is quoted as saying 'Through thick and thin, across all vintages, Bin 389 always delivers - benefitting from over half a century of practice!

Vanya Cullen continues to amaze the world with her brilliantly flavoursome and elegant Cabernet named after Di Cullen, a true pioneer. Vanya is also pioneering in her own style with the introduction to 100% bio-dynamics and the results are to there to be seen by all. Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River. On show here are marvelous aromas and flavours of bay leaf, black tea and some spicy mocha notes. Excitingly dense on palate with harmonious oak balance and impressive acidity. A brilliant wine.

Henschke's flagship Cabernet is named after the late Cyril Henschke who purchased the Eden Valley property in the 1960s. Stephen and Prue Henschke then established the vineyard with Cabernet Sauvignon, Merlot and Cabernet Franc vines which produces this intensely perfumed Cabernet. Matured in 100% new French oak for 18 months, this exceptional wine shows blackcurrant and cedar characters balanced with superb fine grained tannin.
