This is a superb example of the famous Hunter Semillon. Alternate in style and fuller in flavour, with tropical, grassy, lifted characters and a zesty palate. Semillon seems a natural starting point as, along with prosecco and riesling, the variety develops ripe flavours before grape sugar levels (and hence alcohol levels) climb too high.
