In the winery: Lees stirring post fermentation has created a balance between oak, lees and fruit characters. In the glass: Pale lemon, bright and clear.On the nose: Grapefruit, peach, flint and smoked almond. On the palate: Refined with a complex mix of citrus and stonefruit underpinned by well-judged racy acidity. The texture is deep and creamy with long, persistent flavour length.

Defaix's Chablis comes from a range of parcels with different vine age and aspects. Aged on fine lees in glass-lined tanks, this is a textural, and uplifting Chablis rich in oyster shell and citrus notes and driving freshness on the finish.

Hand harvested, hand sorted & whole bunch pressed. Natural fermentation is on high solids with partial malolactic. Barrel fermented in 500-litre puncheons (20% new François Frères), the wine is matured on lees for 10 months before bottling.A bright & punchy Chardonnay; Lemon & grapefruit citrus. Sherbert. MULLINE Sutherlands Creek Chardonnay, Geelong 2021 Mulline (which rhymes with divine) was established by the two Bens, winemaker Ben Mullen and business manager Ben Hine, in 2018. Sutherlands Creek Chardonnay is a fragrant, fresh and lively wine with aromas of lemon and white peach followed by fine structure across the tongue with crisp, bright acidity.

GAFFY AND NEAL Merricks North Chardonnay, Mornington Peninsula

Very fine persistent bead. Straw coloured and vibrant, fresh hue. Fruit aromas of pear flesh and grilled grapefruit intermingle with brioches and freshly baked sourdough. Light toasty elements and slight yoghurt notes add complexity and depth. The palate is creamy and textural with delicate web of acidity interwoven throughout. Cream, yeast, granny smooth apples and butter pastry flavours flow along before finishing with a preserved lemon-like tang.

The Turramurra vineyard is located in exceptional soils and topography allowing the wine to be harvested at ripeness but retains great acidity giving the wine balance, elegance and complexity and now with bottle age, depth and character. This has been cellared for maturation, is ready to drink but will cellar well for another few years and has a fascinating back story.
