A celebration of distinct regional flavours of dark berries, plum and bay leaf, this wine finishes long and boldly.

This medium bodied and elegant wine is a blend of predominantly Cabernet Sauvignon enhanced with a small percentage of classic varietals. Following fermentation and extended maceration, the wine has been matured in new and old French oak barriques, producing a complex blend of Margaret River fruit characters including cassis, eucalypt, capsicum, mulberry and plum with secondary notes of chocolate and cedar. 93/100 James Halliday Wine Companion 2016.

This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. Pair it with dishes like braised beef short ribs, garlic chicken wings, and zucchini gratin with tomato confit, to fully appreciate its satisfying flavours.

A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. Wine whisperer Stuart Pym has crafted this pure Cabernet Sauvignon loaded with dusty red cherry and blueberry flavours that hit all the right notes.

Pure Margaret River Cabernet ripe redcurrant with a touch of cassis and mulberry overlaid by leafy, violet aromas and dusty cedar notes. Richness, softness and length of flavour are features of all our Cabernets from this vintage. The wine has remarkable mid-palate fruit flavour and richness while still showing the freshness, fineness and acidity for which Margaret River Cabernet is renowned.

Appearance: Crimson/RedBouquet: Redcurrant, earth and cedar.Palate: The palate is rich and powerful showing generous mulberry and dark chocolate flavours. A soft and supply backbone of tannin gives this cabernet a long and precise evolution through the palate.

Grape variety - 89% Cabernet Sauvignon, 8% Cabernet Franc, 3% Petit Verdot. Oak maturation - 100% of the wine is aged in French oak barriques (20% new) for 15 months. Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.
