Since the early 90's, Penfolds have been producing Chardonnay from the cool climate region of Tumbarumba. The Chardonnay is elegant with white florals, stone fruits and a great acidity structure. Each year the wine is made it is labelled according to the last two digits of the vintage -- hence Reserve Bin 10A, 12A, 13A and so on. Fruit is hand-picked to small bins and whole-bunch pressed. A portion of the juice is incrementally filled to barrel directly from the press and allowed to undergo a natural fermentation. Thus ...every new (40%) and seasoned (one or two-year-old) French oak barrique is its own, unique 225-litre ferment. Enhanced mouthfeel and complexity is achieved by maturation (typically for eight months) on solids, with intermittent yeast lees stirring. The 100% malolactic fermentation is also natural. Reserve Bin A has established a strong following since it was first made in 1994. It is a fresh, minerally style that occupies a place in the vanguard of modern Australian Chardonnay. With its distinctive, flinty aromatics, creamy texture and razor-sharp acidity, it perfectly articulates the fruit complexity and mouth-watering attributes of cool-climate Adelaide Hills fruit from Chardonnay vineyards across the region.

One of the rare Penfolds wines that is 100% single-regional, the Reserve Bin A Chardonnay is sourced from super premium sites in the Adelaide Hills resulting in a fresh, mineral style that lies at the forefront of the modern Chardonnay style. A wine that will always be linked with 'White Grange', Penfolds Yattarna: This 2014 vintage shows a palate of Granny Smith apples, lemon curd with a pure chalky texture and a lengthy finish.

Yarra Yering, well known for their pristine and elegant red wines, also make one of the Yarra Valley's premier Chardonnays. Made solely from the original 1969 plantings, the Yarra Yering Chardonnay is fermented traditionally in open top fermenters and crafted to age in bottle for extended periods. The wine goes through 100% malolactic fermentation which adds complexity and roundness without foregoing natural acidity and structure. Aged in 40% new French oak, this classic white wine combines intense opulence with finesse & textural flintiness.

Named after the sundial erected in the vineyard in 1842, Wehlener Sonnenuhr is the most famous vineyard in the Mosel. J.J Prüm owns five hectares of this precious vineyard. Extremely steep with optimal south-south west exposure, it yields fragrantly floral wines with ripe stone fruit aromas, underlying slately minerality and wonderful depth of flavour and structure. The Auslese wines are typically more reticent when young showing vivid crystalline citrus fruit and a backbone of tingling minerally acidity that will carry it gracefully for decades.

A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

"Deep crimson-purple; whereas the '11 had to fight every inch of the way, this wine displays almost contemptuous ease in the way it has marshalled the layers of black fruits and ripe tannins that soak up the new oak inputs. Taylors St Andrews Shiraz from the Clare Valley is a classic and is consistently a show-stopper. The bouquet shows rich plum and cherry fruit with earthy spice and the palate is perfectly balanced with soft silky tannins.

The St Andrews Cabernet from Taylors has fine tannins and opulent cassis and fresh blackberry fruit are combined with cedar oak notes that make for a lovely drinking wine for now or something for the medium term section of your cellar.

As featured on "Battle of the Vines": About the Tapanappa, Liinaa effuses, Its got power, a lot of stone fruit characters you often find with a Burgundy wine, but also it has ripping acidity, its razor sharp, pristine. Its got a very beautiful expression of wet stones and textures, its layered, with a bit of spice as well.
