Our 2010 Cabernet Sauvignon has an intense crimson colour. The nose reveals aromas of mixed spices, dark fruits, and toasty French oak. The palate is deep and powerful; showing a ripe spectrum of red to dark fruits combined with star anise, clove, and allspice. The finish is incredibly long, with firm but fine tannins. We consider our 2010 vintage to be the most complete and complex Cabernet Sauvignon produced at Woodlands.

The grapes for this spectacular Best Blocks Shiraz were sourced from the Miamup Road vineyard. The fruit was harvested, crushed, and transferred to stainless steel vessels for fermentation. Post maturation in a combination of American and French barriques for 18 months, the resulting wine features a deep purple red colour. A swirl of the glass presents scintillating aromas of freshly cracked pepper, mixed berries, cocoa bean, spice and vanilla. Fine grained tannins integrate with the soft palate containing ripe red fruits and spices. The finish is elegant and lengthy. This delightful Shiraz can be enjoyed now, or within a cellaring term of eight years. It tastes excellent with char grilled porterhouse steak alongside mustard butter sauce and seasonal vegetables.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. KarriBindi's Shiraz grapes are from mature vines growing on a north facing slope of karri loam and gravel soils. The wine was carefully aged in a mixture of new and old French barrels to enhance the fruit flavours but not overpower them. The deep red colour precedes aromas of cedar, all spice, black pepper, and mocha. The palate is focussed with fine grained velvety tannins, showcasing succulent plum, cherry and blackberry flavours.

Blue and blackberry with rich succulent plum fruit fills the palate with layered with black pepper and anise. Plush layers of supplefruit tannins provide excellent support.
