The fruitof which about half is whole bunchis sorted, then gravity-fed into a vat and a brace of 600L demi-muids, all French oak. Wild fermentation follows and this is evidenced in the structure, complexity and aromatic nature of the wine. There is a week and a half of time spent on skins after which the wine is basket pressed directly into large format French oak, about a third new. Still a youthful creature, this wine will age gracefully for decades to come. A blend of Cabernet Sauvignon (57%) and Shiraz (43%). Sourced from 1971 (100%) planted on the Estate. All batches were fermented separately and blended prior to bottling. These batches of Cabernet and Shiraz represent the pinnacle wines from the Estate, our vision is to produce a seamless integration of the best of both varieties, with great aging potential. The winemaking follow suit from the previous wines, this wine is about the best blocks of the vintage and best barrels being carefully blended. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.

Brothers at War Single Vineyard Barossa Valley Shiraz This old vine Shiraz is sourced from a single vineyard in the Lyndoch Ranges, in the south-west of the Barossa Valley. The fruit is fermented 20% whole bunch with the balance destemmed but not crushed. The wine is then hand plunged twice daily for three weeks before being pressed to French oak (50% new) hogsheads and aged on lees for 18 months before bottling without fining or filtration.
