This Pinot Gris has a bright straw colour with lifted aromas of honeysuckle pear and floral notes. Ageing in oak has given the wine a creamy texture and with crisp acidity on the finish.

Pale colour with a green tinge. Citrus, hazelnuts, brioche, complex and lifted aromas. Finesse and complexity on the palate, lively with good weight and balance.

This is a typical cool climate Yarra Valley Pinot Noir with aromas of cherries and summer berries and hints of spice and oak. The palate is bright with red fruits and soft tannin. Light pale straw in colour with a persistent effervescent bead. Deliciously clean, aromatic nose with a touch of peach and a dash of attractive yeast complex. An elegant soft fruit palate in a drier style, and finishing with a clean acid finish. The wine has an excellent persistent mousse and velvety creaminess. This Chardonnay has opposing elements of minerality and creaminess make this an outstanding, complex wine. The aromas and flavours of lemon pith, chamomile, just ripe nectarine and apricot are underlain by fine grained, smoky oak.The grapes were whole bunch pressed and the free run and pressings separated for fermentation. After chilling, 50% of the unsettled juice was placed in 500 litre puncheons and 228 litre barriques for fermentation. At the end of fermentation, the wine was left on yeast lees for 8 months. The lees were stirred weekly. The remaining juice was fermented in tank to retain the fresh aromas and flavours of the variety. This wine also remained on yeast lees for an extended period of time. The restraint on this wine suggests it will continue to age and improve in bottle. While waiting for the magic to happen, enjoy the wine now with a classic freshly shucked oysters with a dot of green apple granita.

Fruit for this wine was hand-selected from our single site Yarra Valley vineyard. Merlot grapes were used with limited skin contact. Perfumed on the nose with notes of warm toffee and rose petals.The palate is dry with hints of watermelon and spice.
