The 1908 block at the HVD Vineyard was hand-picked and basket pressed, with the juice cold settled for four days before fermentation began in stainless steel tanks. The fermenting juice was then transferred to French oak barriques, 30% of which were new. The wine is balanced between primary chardonnay fruit flavours and secondary flavours, derived from the minimal solids ferment and extended yeast lees contact, resulting in this wine's texture and mouthfeel. Tyrrell's Vat 1 Semillon is one of Australia's great white wines and has the capacity to age superbly in the bottle. This release continues the recent immaculate line up of Vat 1s that show classic citrus floral and honey aromas. The palate is dry, yet full-flavoured with lovely crisp acidity. Les Enfants Koshu Shiro 2015 is light with a soft aroma of pear and freshness of lemon or green apple. Very subtle character of oak is nicely blended. This is a well detailed white wine that pairs well with Sweet Miso Grilled Cod, Creamy Chicken or Camembert Cheese.
