Welcome to ED.02 of our Methode Eucalypt. After 2020s raging success, we are so excited to release the next vintage. This trial tests the hypothesis that vineyards amongst gum trees take on some aroma and flavour of Eucalyptus. Grapes were mechanically harvested in close proximity to Red Gums into 1T bins. The resultant wine showed significantly increased Eucalyptus aroma and flavour. This matured into a distinctly Australian Cabernet Sauvignon that expresses the environment and place in which it was grown. Balanced minty Or Eucalyptus aromas and flavours add to the Cabernet Sauvignon’s complexity, creating a uniquely Australian wine. It is a wine that expresses terroir in the true sense of the word.

The aroma is complex and intense, showing lifted green capsicum, perfume, chocolate, savoury meats and menthol. It has a lovely, balanced palate with fine grippy tannin, fleshy fruit texture and lots of up front flavour. As this wine spends time in the bottle, more complex fruit and developed character will reveal itself from behind the robust structure.

The Jack Estate Cabernet Sauvignon is an ode to Coonawarra and the variety this region so proudly champions. Sourced from respected and passionate growers, the wine reflects the depth, structure, and elegance that define Coonawarra’s finest expressions. An elegant and refined wine, displaying rich fruit flavours of blackcurrrant, blueberry, dark cherry and chocolate mint. Bright acidity elevates the smooth and supple tannins, which, alongside well-integrated cedar oak characters, provide this wine with wonderful mouthfeel and structure. These notes combine to create a full and lingering finish.
