Pommery Brut Royal Non-Vintage
Established in 1836, Madame Pommery is credited with creating the first vintage brut style of Champagne in 1874, at a time when most champagnes were excessively sweetened with sugar. This revolutionary dry style set the benchmark for the rest of Champagne and it is in this spirit that the style of Pommery endures; with each cuvée displaying sublime elegance, finesse and freshness. Pommery is one of the few Champagne Houses that produces their large formats in the actual bottle in order to allow for optimal ageing.

This is winemaker Larry Cherubino at his best, producing this Yarra Valley Chardonnay Premium Cuvée that delivers immediate appeal, with satisfying flavours.Very pale and bright. Pretty nose of white peach, red apple, oatmeal and jasmine. Very dry and refined, with saline complexity alongside the core of citrus and fig, with tight lime juicy acidity, creamy mousse and a savoury finish.
Perrier Jouet Brut Champagne
Silvery gold in the glass, Perrier-Jouët Grand Brut is a vibrant, stylish cuvée characterised by delicate floral aromas, rounded out by fresh fruit and hints of buttery brioche and vanilla. Though crisp and light, it combines freshness with a lingeringly rich, generous finish, preserving its distinctive balance and harmony to the very end.

Floral, green apple along with savoury aromas on the nose. Flavoursome, spritzy palate with a crisp finish. Pairs beautifully with a charcuterie platter or light and fragrant salads.

Kreglinger Brut
A plentiful mousse sits atop a pale straw base that has gold tinged edges and a fine persistent bead. Toasty yeast lees scents are intermeshed with baked bread, citrus, light honeyed notes and traces of nut. The palate is tense and sculptured with racy acidity running through toast, subtly honeyed pear, yeast lees and roasted nut flavours. Dry crisp finish with a long aftertaste that builds a sense of creaminess as it lingers. Drink over the next 2-3 years. Alc. 12.5%

Upon release this Sept 2021, we find that a displayed colour of pale salmon and peach compliment the presence of red apple and baked pastry aromas which seamlessly flow onto a crisp and fresh palate of sweetened fruit and Turkish delight. Perfect as an aperitif, an afternoon with friends or paired with subtle seafood dishes. Predominately, our signle plot vineyard Pinot grape is used here with a touch of Chardonnay to bring a subtle nuance of flavours ripe for Australian summers. Grown & produced at our Ocean facing vineyard which rests under the watchful gaze of Paddy's Head nature reserve on Tasmania's pristine East Coast, the terroir of the region and natural amphitheatre are quintessential for growing our colder climate grapes which we find perfectly reflected here.
