Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. The Bin 28 is named after the Kalimna vineyard that was purchased back in 1945 and from which the original fruit was sourced from. Today, the Bin 28 is a great example of the Penfolds dedication to multi-region, multi-vineyard blending. Made by Rockstar winemaker Ben Riggs, the McLaren Vale Shiraz is as true an expression as one could hope for. The fifth release of the wine is based around a core of pristine fruit with dark red berries, hints of spice, earth, tar and leather and with seamlessly integrated oak. Ripe tannins are apparent but not overwhelming, meaning this is a wine which can be enjoyed now or in the next 10-15 years.

Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.

A high quality wine from the first whiff of the bouquet through to the long finish...has a tapestry of flavours from the base of Cabernet...all supported by persistent but ripe tannins, the oak absorbed by the fruit. Winning the prestigious Decanter International Trophy, we snaffled as much of this wine as we could. Very limited.

The inaugural release of this wine from Juniper, it's a great example of Cabernet's ability to be powerful yet finely-structured and elegant at the same time. Superb.Deep ruby purple.
