Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River. Crafted by Daniel Chaffey Hartwig and Theo Engela, this wine was fermented in a six tonne open fermenter with seven days skin contact and twice daily pump-overs. Matured in shaved, seasoned French oak hogsheads for 11 months. A lovely textural palate is evident immediately, showing quince, subtle lime and just caramelized nougat. This Leeuwin Estate Brut Pinot Noir Chardonnay displays a fine bead that threads the acid line into a seductive mouth filling and long palate.
