Peter Lehmann, icon of the Barossa Valley, has been churning out award winning Rieslings like it's childs play recently. The Wigan Riesling with all its lifted aromatics of citrus and white flowers followed by a complex palate that lingers has again picked up award and award.

Only one litre of Soul is obtained from every 33 litres of fermented sugarcane that is processed. An un-aged non-charcoal-filtered cachaca that is stored in stainless steel vats. Pure and crystal clean, its a high grade cachaca with a distinctive bouquet.

We have chosen Eden Valley to highlight its rich, darker flavours unique to this high altitude, cooler climate and rocky, clay loam soils.

The 2019 (Feire) Blanc De Blancs Sparkling was made using an intricate process called Méthode Traditionnelle—the same time-honored approach used to make French Champagne. The Chardonnay fruit was picked early and sourced from the cool climate of Eden Valley, a high altitude sub-region in the Barossa. The freshly pressed juice is immediately settled and cold fermented in stainless steel. The base wine is tiraged and yeast is introduced into the bottle with sugar for a sec ondary fermentation under pressure (which creates the fine bead of bubbles). This wine was ‘En Tirage’ for three years where the secondary characters developed in the wine. It was hand-riddled in 2022 and disgorged in December the same year. The wine is ready to drink, but it will age gracefully for approximately 5 years. This Chardonnay cuvee is the epitome of finesse and elegance. (Colour) Medium straw (Nose) Freshly baked bread with grapefruit and white musk top-notes and mineral undertones (Palate) The Chardonnay grapes are picked early, when sugar levels are lower and acid levels are higher achieving balance and a crisp, flinty taste, on the palate. Since it is a vintage wine that has been aged on lees the complexity of flavours include lemon cream, honey, almond and toast - an impressive flavour profile whilst retain ing freshness and vibrant bubbles. The consistent fine bead is also noteworthy re sulting in a special offering and well beyond your standard Australian sparkling wine. He used to make CD for friends with his best DJ mixes and signed them Mixed by DJ Deadly. The Keyboard Rose is just another one of his creations.

McHenry Hohnen is the quintessential family owned business with Murry McHenry and David Hohnen being brothers-in-law and the winemaking now being handled by David's son-in-law Ryan Walsh. With decades of Western Australian winemaking and selling history behind David and Murray the wines being produced are of utmost purity and subtlety. The Burnside Chardonnay is a relative recent addition to the range and is a funky, wild little number with attractive stone fruit characters that are balanced by a beautiful natural acidity.

This is a newer world style of Chardonnay showing the elegance of fresh cool climate. Once harvested, the fruit was whole bunch pressed with the un-clarified juice that was fermented with inoculated yeast in seasoned French Oak Barriques. The wine by Paringa Estate was barrel stirred fortnightly during the eleven months of maturation and was sulphured early to retain fruit freshness & prevent malolactic fermentation. The bouquet of this wine is a mix nectarine, citrus/orange and complex sulphide solids aromas. The palate has similar fresh citrus & nectarine fruit flavours along with fine acidity. Chardonnay fruit combined with the complexity of barrel fermentation & maturation.
