Crafted by Daniel Chaffey Hartwig and Theo Engela, this wine was fermented in a six tonne open fermenter with seven days skin contact and twice daily pump-overs. Matured in shaved, seasoned French oak hogsheads for 11 months. This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. Pair it with dishes like braised beef short ribs, garlic chicken wings, and zucchini gratin with tomato confit, to fully appreciate its satisfying flavours.

Garnet in colour with a lively bouquet of black and red fruits with subtle spice, musk and hibiscus notes. The palate is fleshy and mouthfilling with Satsuma plum, mulberry, boysenberry fruit flavours plus Hoisin sauce notes and sweet spice flavours. 15% wholebunch fermentation adds wild depth of flavour and pleasant chewy tannins; balanced by refreshing natural acidity and fine-grained oak texture.

The perfume is driven by a combination of violets, ripe cherries and cedar notes. A powerful palate of plums, black currants andnuances of bay leaf. Food Matches: rack of lamb, roasted vegetable lasagne ora juicy rib-eye steak. Peak drinking: Ready to enjoy on release but cellaring upto 10 years from vintage will find further complexity.

Deep purple in colour this wine is lifted and spicy. The palate does not hold back, deep, spicy potpourri and abundant tannins will see many years reward.
