Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Manjimup has been home to the Macedonian-born Peos family for more than 90 years. With viticulture in their historical veins, brothers Vic, John, Kon and Chris banded together in 1996 to create their dream vineyard as a legacy to their late father, Jim Peos, and late grandfather, P.Y. Peos. The Four Kings range is named after the four Peos brothers. The Peos brothers work hard to keep family traditions alive and ensure Peos Estate follows the customs that were passed down by their late father and grandfather. One of these traditions is the philosophy of minimal intervention, which allows the wine to be produced in the most natural way. This ensures the regional and varietal characters of the grapes are captured and retained in all Peos wines.

A beautifully soft and supple shiraz displaying all the virtues of this variety. Aromas of plum laced with dark chocolate and roasted coffee bean. The palate comes together beautifully with the integration of fine-grained oak and silky fine tannins. A little blue fruit character edges in on the nose before moving into the palate.

Elegant flavours of dark cherry and star anise are supported by sweet tannins, the typical line and length of this variety enhanced by a fine backbone of cedary mocha oak.
