Based on a strong belief people should drink better, not more, Four Pillars is leading the charge to elevate the craft of distilling and celebrate the craft of cocktail making in Australia. Their Rare Dry Gin is made in a truly modern Australian style, capturing the flavours of both Asia and the Mediterranean with a mix of local and exotic botanicals (even using fresh oranges as one of its botanicals rather than dried orange peel). Each bottle is individually numbered, hand labelled and produced in small batches from their small distillery in the Yarra Valley.

Four Pillars Spiced Negroni Gin

Four Pillars Spiced Negroni gin cuts through the Campari and vermouth in your Negroni. It uses the base Four Pillars botanicals along with extra Tasmanian pepper berry leaf and cinnamon. There is also some West African spice called Grains of Paradise, with clove and Sichuan characters. Cameron uses organic blood oranges in the botanical basket, as well as ginger.

Made with fresh rhubarb picked from the farms veggie patch and we also raided a few neighbours rhubarb patches as well to make this gorgeous small batch farm crafted pink gin. It makes a refreshing pink blushed G&T with a delicate tang of Rhubarb. Serve with a splash of good tonic on ice with a fresh slice of ginger or apple.

Big Tree Distillery Elderflower Gin Liqueur

A delicious Australian elderflower GiN liqueur made using handpicked elderflowers foraged from the farm's elderberry trees during spring. Infused with the distillerys award winning Elegant Dry GiN, Australian grown sugar and the farms freshly grown lemons and rain water. Made each year in limited batches this seasonal gin liqueur is a refreshing drink to enjoy over summer. Robust and wonderful, Claude Navy Strength gin has a hint of the Australian bush. Our heavy hitter farm crafted gin that is full flavour (Navy Strength) with a delicate touch of Southern Sassafras foraged from the Victorian bush. This one is certainly worth adding to the drinks Trolley. Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, bay leaf, orris root, cassia bark, coriander, star anise, angelica and Australian native Southern Sassafras. Serving Notes: Beautiful just neat on ice or as Gibson Martini. Or we still love it as a G&T and we use only good Australian tonics such as Strange Love No8.

Four Pillars Bloody Shiraz Gin

Yarra Valley makes some of the finest wines in the world. In 2015, Four Pillars combined Rare Dry Gin with some of the best Shiraz Grapes in Australia to create Bloody Shiraz Gin for the first time. 2018 release has great depth of colour compared to previous releases. Flavour-wise it's showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.
