Straw and cut-grass from the sauvignon blanc balance this wine beautifully with gently tropical fruits providing enough acidity to cleanse and draw out the finish. The palate is soft and plush, with long acidity and a strong finish.

Pale straw colour with nettles, limes, guava and tropical fruits combine to produce a complex nose, which is enhanced with some butterscotch lees characters. The palate is vibrant and fresh with a lovely concentration of tropical and subtle tropical flavours. The wine finishes with persistence and a lingering attractive textural flavour.

Grape variety - Semillon 82%, Chenin Blanc 17%, Chardonnay 1%. Colour - Pale green - straw. Aroma - Fresh and fruit driven, displaying elegant characters of apple, pear, flint and fennel. A wine with great drinkability. Food matches - Fresh seafood and light poultry. Viticulture - Fruit is sourced from neighboring properties in the most northern sub-region of Margaret River. Direct input from Forester`s viticulturist ensures well balanced canopies and crops are grown for the desired fresh fruit driven style. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Grapes were harvested at a lower baume to achieve the delicate style. Winemaking - Modern white wine making techniques are employed in the production of the Brut Cuvee, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. A long cool fermentation follows, allowing for the retention of the delicate fruit characters in the base wine.

In Margaret River, considered one of Australia's premium chardonnay growing regions, Cape Mentelle creates wines of plush texture, depth and power, yet balanced with a fine frame of acidity. This Chardonnay is predominantly from our Chapman Brook Vineyard,established in 1994 in the cool southern half of Margaret River. The cooler climate captures the freshness and vibrancy of the variety. Yellow hay with a bright gold hue. A tropical nose of yellow peaches, melon and mandarin. Generous fruit intensity on the flowing palate, rich with rock melon, pistachio, lemon curd and orange blossom, lifting with a zesty, crisp acidity.

‘Mon Tout’ - in French, means ‘my everything’. It's an ode to the great loves in our lives. And that's what Mon Tout is for the winery. They've always loved the raw possibilities and natural outcomes of minimal intervention winemaking, and have worked over the years to source fruit with lower impact and gentler farming - which they believe is the future for wine. Mon Tout Heydays Chardonnay 2022 vintage comes with another change up this year with Mount Barker dictating even more of the style than the 2020 release, yet Heydays is still overtly, beautifully and enticingly Chardonnay. Delicate floral aromas of honeysuckle, apricot, and lemon zest. Flavours of stone fruit, lychee and pear combine in a silky and seamless manner. The fine, mineral acidity and oak tension adds restraint, texture and length.

Barrel fermentation and maturation in French oak barriques with partial malolactic has imparted texture and complexity to the minerally grapefruit flavours of this Chardonnay from WA's south-west corner.
