Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. The juicy grapes used to produce Best Blocks Cabernet Sauvignon were harvested, and crushed into stainless steel fermenters. The juice obtained was pumped over and left on skins. This deep red-hued Cabernet Sauvignon showcases a brick red haze. The aromatic nose flaunts pleasing scents of ripe berries and dry herbs such as aniseed and sage. These fragrances make way for a rich and soft palate filled with concentrated fruit flavours and balanced tannins. This full-bodied Cab Sauv ends in an elegant, yet powerful and long finish.
