Shinobu Lightly Peated 10 Yo Pure Malt WhiskyShinobu Lightly Peated Pure Malt whisky NAS and 10Y are the first peated whisky to be released by Shinobu distillery. Peated whisky was sourced from selected distilleries from mainly highland and speyside regions and carefully blended by the master blender Mr. Usami Ken and finished in Mizunara wood for more than 6 months.The Shinobu Distillery in collaboration with Niigata Beer Distillery is located in the Japanese seaside region of Niigata on the countrys western coast. The area is famous for its Three White Treasures: snow, rice and sake which have been cultivated there for centuries. Shinobu Pure Malt whiskies are crafted by master blender, Mr. Usami Ken who blends malts aged in sherry, bourbon and Hogshead casks before finishing them in Japans prized Mizunara Oak. Famous for imparting rich, honeyed flavors of apples, pears, cloves and nutmeg, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. Fresh wood barrel dominates the spirit with a touch of vanilla and flowers that bring to breath of nectar, maltose, tones of fruits citrus, Mizunara oak & coffee beans; medium wood intergration, then finish with a sweet aftertaste of maltose. Very smooth, rounded full pallet and easy to drink.

The production takes place in Fuefuki, a region rich in natural resources and surrounded by mountains: two national parks to the north and west, and the spectacular Mount Fuji to the south. SHINOBU (meaning Forbearance in Japanese) Whisky is hand crafted by the creative master blender, Mr. Usami, by carefully selecting whisky from different distilleries which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak.

Made from the blending of malts from the two distilleries of Yoichi and Miyagikyo, this whisky was the pride and joy of its creator Masataka Taketsuru, founder of Nikka and the father of Japanese Whisky. Light golden honey in colour with candied nuts, walnuts and hazelnuts on the nose as well as delicate and gentle smoke coming through with hay. Forward and straight pallet with juicy mouth feel, yet retaining a very gentle and sophisticated heat. Sweet apricots and peach dominate at first, leading to vanilla and subtle hints of ripe grape. Complex and long on the finish with lingering taste of dry herbs, leather and sweet pastry.

Firm, powerful. A well-balanced attack gives equal footing to aromas of peat, smoke, spices, fresh fruit (melon, kiwi) and nuts (almond, walnut), which it delivers in spades. The mid-palate starts off with chocolate notes, but the peat soon takes the lead once again.The finish is long, silky. Extremely mature, it overflows with ripe fruit (pear, Mirabelle plum, apple). The peat starts taking on an herbaceous and malty character, while the salty flavours gives the finish plenty of depth and coastal freshness. The final nose offers menthol, spicy (coriander, dill) and earthy (leather, chestnuts) notes.

Made with diverse unblended whisky brewing techniques and master craftsmanship developed over many years, this single grain whisky features a light and delicately sweet fragrance.

The Hakushu Distillery is know as the 'Mountain Forest Distillery' as it stands amidst fresh streams and lush forests. Built with the notion, 'Coexisting with nature', a bird sanctuary was set up to help preserve the natural environment, thus preserving the pristine water that goes into creating the whisky.
