LARK DISTILLERY Limited Release Christmas Cask Finish Single Malt Whisky 44% ABV, Tasmania

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

Since 1896 all Mortlach whiskies have been 2.81 distilled. Unlike with any other whisky, our spirit criss-crosses between six copper stills of completely different silhouettes 0.81 more times than is Scotch tradition. It is an exact science graced with a touch of magic from The Wee Witchie.The Wee Witchie is the smallest of our six stills. Since it was first forged more than 120 years ago we have fastidiously ensured every dent and detail remains unchanged because it is within this copper chamber that the specific richness of taste which has earned Mortlach the reputation as The Beast of Dufftown is created. We dedicate this 12 year old Single Malt Scotch Whisky to the still that bears the beast. It has been double cask matured in both European and American oak to enhance the distinctively rich and robust character that makes Mortlach whiskies legendary.

Aged 4yrs in Sherry Barrels sourced from Frances wine region, our 100% Tasmanian Single Malt Sherry Cask is a delicate and subtle whisky, with a slight aroma of sweetened candied nectar and a dried fruit spice on the nose, with an undertone of butter. This is followed by an extremely smooth palate with sweeten white wines, raisins, pink candy and citrus warmth with just a touch of oak. The maturation period has imparted rich notes of winter berries, dried fruits, bitter dark chocolate and a gentle woodiness onto the light and fruity spirit. Its a match made in heaven that creates a drinking experience that youre not likely to forget in a hurry.

Part of Diageo's stable, Mortlach enjoys a cult status amongst whisky drinkers thanks to its thick, meaty texture. That unique spirit comes from a complex and unique distillation program, which sees the new make pass through a number of stills of varying shapes and sizes. In the end, it is said that Mortlach distill their spirit 2.81 times. The complex regime results in a thick, meaty spirit - one of Scotland's thickest - and has been prized by independent bottlers and drinkers since the vaunted 16-year-old Flora & Fauna release put it into the public psyche.

Dalmore, located on the northern shores of the Firth of Cromarty, deep in the Scottish Highlands has been making single malt whiskies since 1839 and the bottles still bear the stag crest of the Clan Mackenzie. Their Cigar Malt Reserve is a wonderful blend of three different oak types of 10-15 year old whiskies. White American oak, 30 year old Matusalem Olorosso Sherry casks and Premier Cru Cabernet Sauvignon wine barriques. The final blend has an enveloping aroma and flavour of the finest hand-made cigars; rich and smoky and extremely long lasting.
