The best parcels of wine that make up the Coppermine Road Cabernet mostly come from a rare low-yielding clone which is characterized by its violet and anise perfume, concentration and great acidity.

The rich and full-bodied Coppermine Road Cabernet Sauvignon, named after a neighbouring road, is based on "parent of the Reynell Clone" material, renowned for its low yield, violet blackcurrant aromas and naturally high acidity. This is a classic "best-of-vintage" Australian-style Cabernet Sauvignon, with a great reputation for aging. Typically it shows intense mulberry, violet, cedar aromas with rich cassis, plum, dark chocolate flavours, muscular tannins and underlying savoury oak. After vinification in headed-down open fermenters, fermentation is completed in barrel. 18 months maturation in new and old French oak follows. Older wines may show a touch of earthy, sage, mint characters.

This wine presents a deep garnet hue. Fragrances of cranberry, red currant, cassis and herbs leap out of the wine glass. The palate shows classic Cabernet elements. Ripe flavours of cherry, cranberry and cassis integrate with vanilla oak and cedar. Balanced by firm tannins, the wine leads to a persistent and mouth filling finale. This wine can be cellared for a period of 6 to 8 years.

Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.

All batches were fermented separately and blended prior to bottling. The winemaking follow suit from the previous wines, this wine is about the best blocks of the vintage and best barrels being carefully blended. Rack and returned three times during the maturation of 15 months 100% new oak, Shiraz Burgundy coopered French oak, Cabernet Bordeaux coopered French oak Alan Hickinbotham established the vineyard bearing his name in 1971 when he planted dry- grown cabernet sauvignon and shiraz in contoured rows on the sloping site. In 2012 Clarendon, and the stately sandstone house on the property, was purchased by Jackson Family Wines; it is run as a separate business from Yangarra Estate Vineyard, with different winemaking teams and wines. The Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.
