The Butchers Block is a traditional Barossa blend made with grapes selected from the Turkey Flat vineyards, including some from the original old vine plantings. It is a blend of Shiraz, Grenache and Mourvédre (Mataro). 'Part of the grapes come from the home vineyard that has some of the oldest vines in the Barossa, planted by Peter Schulz's great-grandfather Ernest Schulz. The wine has the drive, focus and intensity often missing from this Barossa blend; that said, there are both black and distinctly red fruit components, and the tannins are firm. Deep red with purple hues. Concentrated plum and blackberry aromas with subtle cinnamon and nutmeg spice. Rich and full flavoured with great depth and intense dark berry fruit supported by premium French and American oak.

This fine mature tawny is made from the Barossa’s traditional tawny varieties, Grenache, Mataro and Shiraz, and has been blended to an average age of a 10-year-old wine. This exhibits a sweet and mellow palate with developed fruit and oak tannin characters.This tawny wine is assessed and re-blended into a solera-based system, enabling us to consistently release wines of such high quality. Only a strictly limited quantity of 10-year-old tawny is drawn from the solera for bottling each year, and the barrels are topped up with selected younger wine.

Made from single vineyard to bottle. Low yields cool climate grapes from Nangkita. Deep sandy soil and limestone beneath, rich in elements for natural aromas and flavours. The wine is dark plum with lifted complex oak aroma. The palate has full flavour with rich berry fruit, warm, rich and intense. Upfront and splendidly appealing, the wine shows blackberry, sweet cherry, rich floral and vanillin oak notes, followed by a beautifully weighted palate that's plump and juicy, finishing lingering and silky. Deep and bright colours with a purple hue, the Optimist Shiraz also offers aromas of lifted satsuma plum, raspberry, violet flower, with a hint of cherry oak. The palate is bursting with bright fresh blue fruits, a rich middle palate with lots of satsuma plum and dark cherries. A long fine tannin structure throughout gives an excellent backbone to this food friendly style of Barossa Shiraz. Awards: • Trophy

Soil and aspect is therefore every much key, imparting style and character and this new release Head Red is no exception. Judiciously used oak allows the deliciously juicy, dark and spicy fruit to shine with an impeccably moorish, savoury structure.
