Defiance Spirits is a personal expression of high quality & design. The recipe was developed over 6 months experimenting with a number of foraged botanicals whilst the design & brand was co-created as an expression of the foraged uniqueness of the gin. Foraged springtime spruce tips, sweet ciciely (anise) and tangerine root are steeped and vapour infused with another 13 botanicals. Super small batch Navy Strength Gin, distilled with Defiance's signature foraged botanicals to deliver an uber smooth and moreish gin.

Inspired by an original Gordons recipe from the 1880s, the pink gin is perfectly crafted to balance the refreshing taste of Gordons with the natural sweetness of raspberries and strawberries, with the tang of redcurrant served up in a unique blushing tone. Made using only natural fruit flavours to guarantee the highest quality real berry taste.

The aim of the Bermondsey Dry Gin was to revive and honour a mid 20th century style of London Dry gin, the style and quality of which reflects gins that would have been used throughout the classic cocktail period. Smooth and rounded, with delicate floral and citrus notes it is an essential gin for a Dry Martini.

Distilled in London at Thames Distillers, Fords Gin is a collaboration between 10th generation master distiller Charles Maxwell and gin expert Simon Ford. A modern take on a classic London Dry Gin, Fords Gin starts with a traditional base of juniper & coriander seed balanced by citrus, florals and spices that are steeped for 15 hours before being distilled. Each botanical blends together to create the perfect base for any gin-inspired cocktail. A mix of 9 botanicals including Juniper, Coriander, Lemon Peel, Bitter Orange Peel, Grapefruit Peel, Angelica, Cassia, Jasmine and Orris. is a very bright and aromatic gin with a light sweetness on tip of the tongue. A gentle introduction of the botanicals follows with notes of angelica root and citrus oils balancing on the palate beautifully. The finish lingers with fresh zesty grapefruit and juniper.

Taking inspiration from countryside hedgerows, this very rich and juicy gin focuses on red berry notes. Almost jam-like in profile, Forager has a lingering raspberry/blackberry character perfect for a Summer refreshment. Best served with raspberry lemonade or a premium tonic, garnished with a handful of raspberries and strawberry slices. By making this gin from berries that can be foraged from Scottish hedgerows, Eden Mill is looking after an important part of the British countryside and is highlighting the plight and importance of these little ecosystems.
