Curtis Ancestor McLaren Vale Shiraz

We have dated our family tree back to 1471, where Paolo Curtis started wine production on the original Curtis family property “la cavata” near cassino, central Italy. We made this wine to commemorate the sacrifice & toil of centuries of hard work that have led us to now. This Shiraz fruit was hand-picked from 80-year-old vines, gently destemmed & cold soaked on skins for 14 days, Fermented slowly for a further 14 days. Giving time to allow slow extraction of colour & silky tannins. This extra time allows the wine to develop a great depth of flavour & palate structure. The ferment is slowly pressed straight into a mixture of French & American oak barrels The magic happens over the next 24 months where the wine will develop and integrate into a special montage of flavourful delights. aromas of ripe red berries, vanilla & Coconut. Full-Bodied palate structure with a complex mix of flavours, Ripe red berries, coconut, chocolate & spice. Great middle palate sweetness with well-integrated oak characters. well balanced & long silky tannin finish.

100 Year Old VINES SHIRAZ

The Barossa is home to some of the world’s oldest ungrafted Shiraz vines. The vines were planted in a pre-mechanized and pre-irrigation era where site selection was everything. Dry grown as bush vines with only the best soils, vine material and sites surviving the first years, and only the absolute pinnacle surviving the 100 years thereafter. The low-yielding ‘Centenarian’ vines, noted for their intensity of flavour, were planted more than a century ago around the time construction of the Château itself began. The select parcels are hand-picked and fermented in small open fermenters with hand plunging four times daily before careful basket pressing to extract tannin and colour. Penfolds Magill Shiraz

The single vineyard Magill Estate Shiraz is intrinsically linked to Penfolds beginnings. Sourced from the Magill vineyard on the edge of Adelaide’s eastern suburbs (just eight kilometres from the city’s CBD), fruit is crushed, fermented and matured on-site at the original Penfolds Magill Estate Winery, established in 1844. Magill Estate Shiraz, first produced in 1983, is an elegant, medium-weight style with velvety texture and fine tannins, matured in both French and American oak. It is a sleek, contemporary wine, yet crafted the original way: hand-picked, vinified in open fermenters and then basket pressed to complete fermentation in barrel.

OR Clonakilla Canberra District Shiraz Viognier

Winemaker Tim Kirk's ethereal and evocative Clonakilla Shiraz Viognier is perhaps one of the most important advances in the development of Australian Shiraz since the release of 1952 Penfolds Grange Hermitage. The fruit is sourced from two adjacent estate-owned vineyards. The original vineyard has south-east and south-west aspects whereas T and L Block faces north-east. Lying at 600 meters above sea level, the soils are granitic with sandy brown and red loams over friable clay. Traditional 'Burgundian' winemaking techniques are employed "to highlight the inherent flavours in the fruit". The aim is "to produce wines with natural balance and roundness". Clonakilla Shiraz Viognier is medium to full-bodied with highly aromatic ginger, white pepper, apricot fruit, underlying savoury French oak and fine slinky dry tannins. The Viognier component melts into the Shiraz and is rarely more than a "subliminal influence". The style captures the essence of contemporary winemaking philosophy and regional expression.
