Four Pillars Navy Strength Gin

Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

Mt Uncle Distillery Botanic Australis Gin

An award winner, this tripled distilled in a copper pot and macerated for 3 days using 14 Australian native botanicals (plus 1 non-native). This unique flavoured Gin provides a hint of juniper to start off and then the intensity of the other flavours start to come through. Lemon, mint and then a boom of herbaceousness topped off by a peppery after note.

Prohibition Liquor Co Gin Carafe

A delicate citrus/floral nose of fresh lime, guava and lavender warmth, given tension from herbal tones of pink peppercorn, lemon myrtle and the unmistakable, yet light scent of wormwood. Blood orange and peppery juniper set the tone on the palate with a fine interplay of refreshing herbal raciness and a pleasing sweetness derived from vanilla. Lavender floral and vanilla tones continue onto a smooth and elegant finish.

Poor Toms Sydney Dry Gin

The original. Our Sydney Dry Gin is unlike any other. We steep 10 botanicals in Australian wheat spirit, which is then distilled in our little German copper still. You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. Perfect in a strong G&T, a gin and soda, or a dry martini. For more delicious results, serve with a strawberry.

Four Pillars Olive Leaf Gin

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Gold Medal Winner in the San Francisco 2020 International World Spirits Competition.

Anther Spirits Florescence Gin

Florescence Gin is a collaboration between Royal Botanic Gardens Victoria and Anther Spirits. This boutique gin contains plants foraged from Royal Botanic Gardens Melbourne. Proceeds from the sale support Royal Botanic Gardens Victoria’s important landscapes, research and innovative public programs. FLORESCENCE GIN is hand made at Anther Distillery. Florescence according to the Oxford Dictionary means “the process of flowering” or “the process of developing richly and fully”. All Florescence ingredients are currently growing at both Gardens sites, Royal Botanic Gardens Melbourne and Royal Botanic Gardens Cranbourne, which are home to thousands of plant species: there are 8,500 at Melbourne and 1,700 native Australian plant varieties in the Australian Garden at Cranbourne. This includes traditional ingredients such as Juniper, Coriander Seeds, Orange and Lemon peel, but also includes unique selections of native Australian plants such as Tasmannia xerophila (Alpine pepper), Kunzea parvifolia (Violet Kunzea), Baeckea gunniana (Alpine Baeckea) and more. One ingredient, Tasmannia xerophila is a common shrub of the alpine zone and an ancient native woody plant in Victoria. The leaves and berries are aromatic but have a little heat that takes a little while to hit the palate. Another, Kunzea parvifolia is fairly widespread in Victoria. In spring its mauve bottlebrush-like flowers can light up its environment with a purple haze. Tim Entwisle, Director and Chief Executive, Royal Botanic Gardens Victoria says, “I have personally taste-tested and approved of this gin. It has a fantastic aroma and a unique and charismatic flavour. We hope that you enjoy it!”
