Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

This savoury Pinot Noir is the result of an assemblage of twelve individual batches sourced from our Maroondah Highway vineyard. Subtle aromas of rhubarb, violets, earth, chervil, mace, leather, pencil shavings & cocoa nib with a stemmy note contributed by fermention with stalks. The composed elegant palate exhibits strawberry, tamarind & peach stone tartness from ingrained natural acidity, softly spreading fruit weight & sweeping talc-like tannins.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Levantine Hill Syrah has lifted complex aromas of dusty red berries, musk, cardamom and white pepper and vanillin oak. The elegant medium-bodied palate abounds with spice and earthy nuances in a concentration of savouriness. The silky ripe tannins have been deftly integrated with the underlying oak providing carriage for the fruit weight and lingering flavours to a pronounced and persistent finish.

In the 1920s Prohibition Era, a Blind Tiger was an establishment known to illegally sell alcohol, with a focus on celebrating the exciting flavour and taste of liquor cocktails, many of which were Gin based. Blind Tiger Organic Gin is distilled in small batches and is a complex, yet elegant and aromatic gin.

For the Old Vine Reserve by Seville Estate, the Pinot Noir is purely sourced from the original 1972 plantings. The block is one acre and produces low yields (1-2 tonnes/acre) of small berries and bunches. The colour is deep especially for Seville pinot with a slight hazy pale purple hue. The wine is beautifully perfumed and bright with strawberry red fruits, spice, slightly gamy with earthy tones. Darker fruits on the palate with multi layered characters of red fruits, savoury whole bunch, nutmeg spice and smoky bacon. The wine has great length and natural fruit tannin that is nicely balanced with the acidity and oak.

An award winner, this tripled distilled in a copper pot and macerated for 3 days using 14 Australian native botanicals (plus 1 non-native). This unique flavoured Gin provides a hint of juniper to start off and then the intensity of the other flavours start to come through. Lemon, mint and then a boom of herbaceousness topped off by a peppery after note.

The original. Our Sydney Dry Gin is unlike any other. We steep 10 botanicals in Australian wheat spirit, which is then distilled in our little German copper still. You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. Perfect in a strong G&T, a gin and soda, or a dry martini. For more delicious results, serve with a strawberry.
